Traditional Buttermilk Scones

Light, golden scones made the old-fashioned way, using Cuinneog's tangy traditional buttermilk for that unmistakable, tender crumb. Perfect with a generous spread of Cuinneog farmhouse butter and a cup of tea.

Ingredients

  • 450g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 1 tbsp caster sugar
  • 50g cold Cuinneog farmhouse butter, cubed
  • 350ml Cuinneog traditional buttermilk

Method

  1. 1Preheat oven to 220°C (200°C fan). Lightly flour a baking tray.
  2. 2Sift the flour, bicarbonate of soda, salt, and sugar together into a large bowl.
  3. 3Rub in the cold butter until the mixture resembles breadcrumbs.
  4. 4Make a well in the centre, pour in the buttermilk, and mix quickly with a fork until a soft dough forms. Don't overwork it.
  5. 5Turn onto a floured surface, pat to 3cm thick, and cut into rounds.
  6. 6Bake for 12-15 minutes until well risen and golden. Best eaten warm.

Brown Soda Bread

A classic Irish soda bread with a rich, nutty flavour. Cuinneog buttermilk reacts with the bread soda to give a beautiful rise and a moist, hearty loaf that goes with everything, from soup to smoked salmon.

Ingredients

  • 350g wholemeal flour
  • 100g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 1 tbsp treacle or honey (optional)
  • 400ml Cuinneog traditional buttermilk

Method

  1. 1Preheat oven to 200°C (180°C fan). Grease and flour a 900g loaf tin.
  2. 2Mix the flours, bicarbonate of soda, and salt together in a large bowl.
  3. 3Stir the treacle (if using) into the buttermilk, then pour into the dry ingredients.
  4. 4Mix until just combined. The dough should be soft and slightly sticky.
  5. 5Pour into the prepared tin and bake for 40-45 minutes until a skewer comes out clean.
  6. 6Turn out onto a wire rack and allow to cool before slicing.

Fluffy American Pancakes

Light, fluffy American-style pancakes made with Cuinneog natural buttermilk. The buttermilk gives these pancakes a subtle tang and an incredibly soft texture. Serve warm with your favourite toppings.

Ingredients

  • 150g plain flour
  • 1/2 tsp salt
  • 1 tsp bread soda
  • 225ml Cuinneog natural buttermilk
  • 1 egg
  • 1 knob of Cuinneog Irish farmhouse butter, melted

Method

  1. 1Sift together the flour, salt, and bread soda. Make a well in the centre.
  2. 2Pour in the buttermilk, then add the egg and melted butter.
  3. 3Beat well until the pancake batter is smooth.
  4. 4Heat a frying pan over a medium heat. Lightly grease with Cuinneog butter.
  5. 5Ladle the pancake batter onto the pan. Cook each pancake until bubbles appear on the surface and the edges appear slightly dry.
  6. 6Flip each pancake and cook for a minute or two on the reverse side, till golden brown.
  7. 7Serve warm with your favourite toppings like honey and blueberries.

Natural Buttermilk Smoothie

A refreshing, probiotic-rich smoothie using Cuinneog natural buttermilk. Quick to make and packed with flavour, this is a great way to start the day or enjoy as a light snack.

Ingredients

  • 300ml Cuinneog natural buttermilk
  • A squeeze of honey
  • 250g approx of chopped fruit, such as blackberries, banana, pear, orange, strawberries, or blueberries
  • 1 ice cube (optional)
  • A sprig of fresh mint (optional)

Method

  1. 1Put the buttermilk, honey, and fruit in a blender or smoothie maker and blitz until smooth.
  2. 2Add in an ice cube at the end for extra refreshment.
  3. 3Top with a sprig of fresh mint and serve.
